How to Start It

★ Recommended for beginners

Set a 15–20 cm root cutting (fat end up) at a 45° angle, top about 5 cm deep, in spring. It'll be ready that autumn. Contain it — any root fragment regrows into a new plant.

Grown from root cuttings, not seed. WARNING: horseradish is extremely vigorous and spreads from any root left in the ground — plant it in a sunken bucket or a dedicated bed, or it'll take over. One plant supplies a household.

Planting & Sprouting

Growing Tips

  • 1Horseradish thrives on neglect in full sun and deep soil.
  • 2The only real skill is containing it: a bottomless bucket or its own corner, and dig it out thoroughly each year.
  • 3Remove flower stalks to keep energy in the root.

When to Pick

Dig roots in late autumn after frost, for the hottest flavour

How to Harvest

  • 1Dig the main roots in late autumn after a frost or two (cold sharpens the heat).
  • 2Save a side-root to replant.
  • 3Grate it outdoors or in a well-ventilated spot — the fumes are fierce.
